Sweet Potatoes Topped with Black Beans and Kale
Ingredients:
4 medium sweet potatoes
1 onion, chopped
2 cloves garlic, chopped
6 cups chopped kale
1 1/2 cups cooked black beans or 1 (15 ounce) can no-salt-added or low sodium black beans
1 1/2 cups diced tomatoes, or 1 (15 ounce) can no-salt-added diced tomatoes
2 teaspoons chili powder
1 teaspoon cumin
2 tablespoons chopped cilantro
1 cup unsweetened non-dairy yogurt
Instructions:
1. Pierce sweet potatoes in several spots with a fork. Microwave on high until soft, 12 - 16 minutes.
2. Potatoes can also be baked in a 350 degree oven for 50 minutes or until soft.
3. Meanwhile, heat 2 tablespoons water in a large pan and water saute onion and garlic for two minutes.
4. Add kale and stir until wilted.
5. Cover pan and cook until kale is tender, adding water as needed, about 10 minutes.
6. Add black beans, tomatoes, chili powder and cumin, bring to a simmer and cook for 5 minutes.
7. Cut each potato lengthwise, skin and partially mash, then top with bean mixture.
8. Sprinkle with cilantro.
9. Top with non-diary yogurt.

Mustard Yogurt Dressing Recipe
1 teaspoon salt
black pepper, to taste
1 tablespoon Dijon mustard
1 cup plain yogurt
3 tablespoons olive oil
Poppy seeds (optional)
Mix all ingredients until smooth.

Ginger Chicken by Regina Seppi
2 T. Red Palm oil or other oil
4 1/2 lbs. chicken, thawed
Set in a Vita-Mix:
2 peeled whole lemons
2” square piece of fresh ginger, peeled
1 whole bulb garlic, peeled
1/4 c. Bragg’s Liquid Aminos
Blend ginger sauce till smooth.
Pour the ginger sauce over chicken. Cover with a lid and cook well. Save the broth to be used on baked potatoes, added to gravies, rice or sautéed vegetables. Serves 9

Almond Potato Salad By Dinah Seppi
Serves 20
Cook 7 or 10 lbs. Potatoes
Let cool at least 3 hours
Add to Vita-Mix:
2c. Almonds
1t. Sea Salt or more
1t. Onion powder
Blend till fine paste. Add:
1 Whole peeled lemon
1 1/3 c. Water
Dice:
1 head Celery
1 firm Onion
Add:
3c. Olives
1/2 c. Prepared Mustard
3c. White long Mung bean Sprouts (Optional)
1 T. Apple Cider Vinegar
Cut the cooled potatoes into bite sized chunks, mix all above.
Top with 1 fresh tomato diced.
This is really good the next day after all the flavors have mixed!

Dinah’s Gravy
serves 10
In a small pan put on to boil:
1 1/2 c. liquid from Canned Corn
3 c. water or liquid from boiled vegetables
1/2 t. onion powder
1/2 t. sea salt
In a VitaMix grind fine:
2 c. Raw Sunflower seeds [or 1c. raw Almonds + 1c. raw sunflower seed]
1/4 c. Tapioca powder
1t. California Chile pepper
1/2 t. Rosemary chopped & dried
1/2 t. Dr. Furhman’s Vegi Zest (optional)
Add boiling water to the VitaMix blend on high 10 seconds.
Serve hot.
I serve this over finely diced raw turnip tops, salads with kidney beans, soups, mashed potatoes, cooked carrots, broccoli, cauliflower, collards, chard, Kale etc.
Refrigerator leftovers.

Vita Mix
The Vita Mix was one of our first purchases after our small house in town sold 12 years ago. We've kept up the warrantee and the same unit is still serving us sometimes three times a day!
We grind almonds, grain for bread, salad dressings, smoothies and then blend soapy water to clean it:).
One tip: the dishwasher is not a good place for the blender container and don't submerge the base of the container in water either-- we had to replace some parts after doing that.
We make green drinks too, with unsweetened canned pineapple and fresh spinach. I've heard parsley or mint is fun to add.
You can use the wet or dry blade container to grind almonds, but not more than about two cups at a time. If you want to make almond butter, you will want to roast them or add a couple tablespoons of oil after they are ground to powder. For this we use grape seed oil.
Jodavid discovered something that helps reduce the noise. He pops popcorn in the pantry with the door closed. Now we do this with our Vita Mix too.

Melody’s Spanish “Rice” (Cauliflower Salad)
time 20 min., serves 8
In a salad bowl, combine:
1 ½ head of cauliflower, grated on cheese size grater or 4 ½ c. cooked rice
1 or more red or yellow bell peppers, diced
½ Jalapeno pepper (opt.)
1 head of celery chopped
1 onion, chopped
2 tomatoes, diced
3 avocados, mashed
2 T fresh lemon juice
¼ c cilantro, diced
½ tsp sea salt
2 c. sliced olives
1 Tbsp. paprika
1 tsp. chili powder
¾ c. sliced almonds
¼ c. cold pressed extra virgin olive or flax seed oil
Stir all together well and serve.

Dinah's Pesto Sauce
Grind till fine in a Vita-Mix:
1 ½ c. raw cashews
1t. sea salt

Then add:
¼ c. extra virgin olive oil or Flax seed oil (our favorite)
½ c. water
Fresh basil: as much as you can grab in one hand out of a bowl full of fresh basil leaves.
2 cloves minced garlic
Blend.
Mix into a large pot of unsalted brown Rice or Millet. Or, put less salt and serve over any cooked vegetable.

Recipes
Eggplant Sauce (for a family of 8)
5 medium eggplants diced in a bosh food processor
1/4 c. extra virgin olive oil
1T. whole dried oregano
1 t. sea salt
2 t.
1 1/2 t. ground cumin
1 1/2 t. thyme chopped and dried
1t. rosemary powder
1 cup garlic
2 c. vegetable broth-I use canned corn water or whey
Bring all to a boil and stir till eggplant is well cooked.
Then add 8 c. canned diced tomatoes
Serve over brown rice, whole grain spaghetti or cucumbers
Jodavid's Sensational Almond Milk 4 c. dry baby lima beans soaked 8-24 hours.
1/2 t. sea salt
1/4 t. rosemary powder
1/2 t.
1/2 t. cumin powder
1/4 marjoram powder
1/4 savory powder
Bring to a boil and cook on low for 3-4 hours.
Dice 5 green bell peppers in a Bosh or food processer.
Sauté in 1tbsp. olive oil and 1cup of the lima bean water.
Slice 5 carrots (optional) in Bosh and sauté in 1 cup of bean broth
Spinach Smoothie
5 c. unsweetened pineapple chucks with juice
1 pound spinach
7 ice cubes
Blend in a vita mix till very smooth.
Mother and I like 1 1/2 c. less pineapple in ours.
This is amazingly refreshing and good!
Once mother went to our eye doctor and asked what was the best food for your eyes
"Actually, spinach," he said.
