Raving Raw Honey



Unfiltered honey contains propolis, a compound that kills bacteria. Raw honey is best because it has not been through a heating process (over 100 degrees, as it is in the beehive) Therefore, it tastes much better.

Honey is one of only three common foods containing pinocembrin (ginger is another), an antioxidant associated with improved brain function.

Glucose is good for learning and memory. Honey is primarily composed of two types of sugar: glucose and fructose. Honey high in fructose rarely crystallize. Honey high in glucose has a stronger tendency to crystallize over time. To re-liquefy your crystallized honey, leave in your car sitting in the sun or stand the lightly sealed jar into a container of warm water for 20 minutes or run under a hot tap. The honey will gently liquefy.

⅓ c Apple Cider Vinegar, raw and unpasteurized
⅓ c Raw Orange Honey
1 large Lemon, peeled w potato peeler
1" cube of Ginger, peeled
Blend above in filtered water, then pour into a gallon and fill with filtered water.

Superfood ~ Spirulina Chocolate Balls


In VitaMix blend together powders: 
1 ½ c Carob Powder
1 ½ c  Raw Cocoa Powder 
c  Ground Flax Seed
¼ c  Spirulina Powder
c Coconut or Peanut Flour
¼ c spice mix or these:
1 T Cinnamon
1 T Coriander
1 T Nutmeg
1  t Allspice
1  t Cloves
1  t Mace

Add powdered mixture to a large bowl with nuts and seeds: 
c Chia seed
1 ½ c  Almonds
1 ½ c  Walnuts, broken
¼ c unsalted 
¼ c Goji Berries 
¼ c Unsalted Pistachios
c Pumpkin seeds
1½ c  Dates, chopped
½ c raisins or chopped dried mango

Combine:
3 c  Filtered Water 
5 drops of Peppermint Oil
2 t  Vanilla Extract

Stir in the liquid ingredients.
Form into balls and roll in one of these:
Unsweetened Desiccated Coconut
Sesame Seeds, Hempseed

You may want to wear thin gloves to roll into small balls because it is messy.  [I use the melon scoop from BB&B.] Place in sandwich bags and hide in the freezer. Keep just one bag in the refrigerator at a time. Sometimes you can get them to last a bit if the men aren't aware how much is stashed away. :) 
A bag left in the van for a week will go bad and taste terrible. They need refrigeration.


To make measuring spices simple, I keep a small jar of about 6 T each of cinnamon, nutmeg, coriander and 2 T each of allspice, mace, cloves.  With this mixture done ahead, just use ¼ c of the spice mixture for this recipe. These spices are an excellent source of antioxidants to sprinkle on breakfast oatmeal.

Vegetable Juicing

Whole lemon & lime are part of our daily routine of juicing for one gallon to last the day: 3 Zucchini, 2 large Beets & their Greens, 15 (3 lbs.) Carrots, head of Celery, 2 lg. or 4 small Green Apples, 3/4" cube of Ginger, slice of Red Cabbage, and topped with a long squirt of Flaxseed Oil and a few shakes of Cayenne. Mmm fresh juice is marvelous. The rest is stored for a snack later. 
We love it!
David is just coming off a three week juice fast yet was busy working (even taking time out to run 4 mi and do 500 pushups every 3-4 days).

Very fortunately for me, I'm thin so David doesn't bug me about losing weight.
He would tell me that he wants to be thin like me.
To this I replied, "Oh NO, sweetie. You look great!"
David stopped his juice fast when he reached his desired "perfect" 160 lbs.
Juice fasting is much easier than water fasting because the body is nourished and satisfied.

I am concentrating on vegetables this fast, but adding a some apples, hard pears, tomatoes, squash, eggplant, jalapeño, and bell peppers from time to time. Daily, I am taking 1 to 2 tablespoons of organic flaxseed oil (essential fatty acids) and 25 grams of hemp protein powder (essential amino acids) in my juices to avoid muscle loss. Try using the hemp powder in a just carrot and celery juice because it will be easier to stomach. 
     I am using a Breville BJE510XL Juice Fountain Multi-Speed 900-Watt Juicer I bought off Amazon ($194.00). It is very fast and easy to clean. It juices all kinds of greens which made it attractive to me. 
     The amount I drink at a time may vary. I drink 12 oz. to 32 oz. depending on my need.

Vegetable Pulp Crackers

Prepare a delicious veggie juice and drink! Save the leftover juice pulp for use in this recipe. 
We juice 3 zucchini, 2 lbs. carrots, a head of celery, 2 green apples, a beet, and greens if available, a few leaves of swiss chard or kale, a lemon, a lime and a knob of ginger.

Raw Vegetable Juice Pulp Crackers

2 1/2 cups leftover vegetable pulp
1 1/2 cups water (less than)
1 large chili
1 t. garlic powder
1 t. ground paprika
¼ t. ground chipotle chili pepper
¼ t. ground ancho chili pepper
1 teaspoon curry powder
1 teaspoon sea salt
Combine the above ingredients in a Vita-Mix blender or other food processor.
Add these using a Bosch or mixing bowl 
1/2 cup flaxseeds
1/2 cup ground flax meal
1/4 cup sesame seeds
1/4 cup chia seeds
1/4 cup hemp seeds
1 c ground almonds

 Spread the mixture over the sheets of a dehydrator sprinkled with ground sesame seed and using a rolling pin, roll to about 3-4mm thickness (it will help to use baking paper or plastic wrap between the mixture and your rolling pin). Score lines on the surface to your desired cracker shape. Dehydrate at 115º F. for approximately 12 - 24 hours. Remove, break along the scored lines. Store in an airtight container in the pantry, refrigerator or freezer.

Pizza Base: Roll them out to the size of a pizza base (and leave them a little thicker than a cracker) and dehydrate them for less time (so not super crunchy). You could then spread them with some homemade pesto, fresh cherry tomatoes, olives...any of your favorite combos
How about a wrap? Give them about 4 hours on one side and flip them over for another few hours or until it is pliable enough to wrap around your chosen salad ingredients
Add leftover cooked quinoa to the pulp for a health addition.
You'll need:
* If you don't have a dehydrator, an oven on 120º F or 50 degrees Celsius will produce a similar result.

Chocolate-Fig Pudding

 Chocolate-Fig Pudding
Oh, bring us some figgy pudding!

In your DRY Vita-Mix container
Grind: 1 c almonds + 10 apricot seeds - Break open the apricot pit with a nut cracker. The seed will look like an almond.

In your WET Vita-Mix container blend well:
10 figs 
⅓ c. cocoa
⅓ c. carob
2 T vanilla
add powdered almonds & apricot pits
opt. add 2 T coconut oil or 2 T Concentrated Coconut Cream.
Fill blender with soy milk OR water and two droppers of Stevia sweetener
Blend and pour into 8 cups.

Coleslaw

Shred 1-2 heads of cabbage on a cheese grater. We use a Bosh shredder.
Combine these in a bowl:
1 t. salt
1 t. sesame oil
1/4 to 1/3 c. flax seed or olive oil
2 tsp dijon mustard
juice of 1/2 to one lemon
1 t. dill weed
1 t. Pappy's
Stir together the above.
Add: the shredded cabbage
3 c. of green peas
1 chopped red bell pepper
Stir together & Serve

Gravy

Boil 5 c. water

Place in Blender [Vita Mix]:
2 c. almonds
1/2 c oats (opt.)
1/4 c. nutritional yeast
1/3 c. arrowroot, or 1/2 c if not using oats OR cooked potato may be used as thickener
2-3 t. (No Salt)  Pappy's
1 t. salt (if the Pappy's has none)
t. CA pepper1 green bell pepper
Add boiling water last, 
then blend all ingredients together.
Good on potatoes, rice or millet.

Melody's Veggie Casserole & Salad

Fills a 10x16 pan; serves 20 

The Beans
soak pintos for 8-24 hours, 
Cook with 1/2 to 1 inch of water above.
When cooked add desired seasonings and salt.
Add 1/2 a red bell pepper and allow to cook in.
The Rice
Sauté 4 c. Rice in Coconut oil with
1-3 T. Braggs Liquid Aminos
1 T. Curry
1/2 t. Chipolte
2 Pasilla peppers, de-seeded and blended with 1 c. water
1 large Onion
4-5 garlic cloves, minced
1 1/2 t. Salt
1-2 T. Basil
When rice is brown/translucent adding 8c. boiling water, 2c. at a time, stirring often. Turn low when it boils and stir rice every 10-15 min. When almost done add 1/2 a red bell pepper and allow to cook in. (sliced olives opt.)
The Gravy
2 c. cashews or sunflower seeds
1/4 c. oat flour
1/4 c. arrowroot Flour
1/3 c. nutritional yeast
1 T. california chile pepper pwdr 
1 t. onion pwdr.
1 t. salt
5 c. boiling water

Blend dry ingredients, add the water and blend again.
The Sauce
blended tomatoes in pureé 
enchilada sauce

The Veggies 
4 summer squash, thinly sliced
4-6 carrots, thinly sliced
1/2 lb. mushrooms, sliced
20 Tortillas (more if desired)
Layers:
(intersperse with gravy and sauce)
gravy, sauce, squash, beans, rice, tortillas, carrots, 
rice, beans, mushrooms, tortillas. 
Drizzle coconut oil over the tortillas. You may wish to cover with foil. (If you do, the baking time can be cut down.)  
Bake for 30-45 min. @ 400 degrees.

You may wish to serve it with Salad:



2 heads of romaine, torn
and your favorites from the following:)
red bell pepper
shredded purple cabbage
broccoli
green onions
shredded carrots
white sesame or sunflower seeds 
radishes
purple onion
cucumbers
tomatoes
garbanzoes
red kidney beans
avocado
cooked quinoa
Cashews 

For a dressing, toss salad with salt (to open the pores), oil, apple cider vinegar, juice of a lemon, and your favorite seasonings.

Can't Be Beat!


This is surprisingly delicious.
It is a great detoxifying and nutritious drink.
Just make sure you have enough apples or fruit.

Ingredients: 
Several apples - Remove cores.
Several beets and their greens, rinsed
A few small collard greens, rinsed
One peeled lemon
[May add:  carrots, celery, peeled ginger]

Put all through a juicer. We use the Omega Megamouth. Macy's is carrying it now. We bought ours after hearing Cherie Calbom speak at the Modern Manna health conference in Lodi.

Honey Vanilla Ice Cream


You can celebrate Regina & Greg's wedding again
any time you make this home-made ice cream:
For a 3 1/2  gallon ice cream maker
1/2 gallon cream
1/2 gallon half & half
1 2/2 c. honey
1 1/2 c sugar
3 T. vanilla
Then fill with milk up to 3 to 4 inches from the top.

Coconut Chocolate Cake

Many have asked for this:
Regina's Wedding "Brownie" recipe.


4 c. ground coconut paste (Grind shredded unsweetened in the Vita-Mix.)
1 lb. butter
1 2/3 c. honey
10 eggs
1 tsp. vanilla extract
2 c. unsweetened cocoa powder.
1 T baking soda
1 t. baking powder
1 t. sea salt
2 2/3 c. water

Pre-heat oven to 350 degrees or 325 degrees with convection. Grease two 9x13 inch pans with coconut oil and dust with unsweetened cocoa powder.
In an electric mixer, combine butter and honey, and beat together for about 2 minutes. Add eggs in one at a time and beat at high speed about 3 minutes. Add vanilla while beating the eggs and butter mixture. In a separate bowl, combine dry ingredients and add alternately with milk to butter mixture. Beat batter for about five minutes on high speed. Spoon batter into two prepared cake pans and smooth out tops. Bake at 350 or 325 with convection for 45 minutes to 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Place pans on wire rack and allow to cool for 10 minutes before removing from pans.

Scalloped Potatoes by Dinah

Enough russet potatoes, sliced thin to almost fill 13 x 9' pan.
1 onion, thinly sliced
In Vita-Mix:
2 tsp. Celtic sea salt.
3 1/2 cups raw almonds
1 T. California Chile pepper
2 t. Garlic pwd.
Grind till fine.
Add to blender:
1T Basil leaf cut
5c. Boiling water Blend till smooth.

Layer:
Sliced potatoes
Sliced mushrooms (optional)
Onion rings
Arrowroot pwd. (About 1/4 c.) Sprinkle it less than 1/8" thick.
Sliced potatoes layer then a second layer of arrowroot pwd.  (About 1/4 c.) less than 1/8" thick.
Pour over layered potatoes, it should barely cover them, add water if necessary.
Cover with foil.
Put a cookie sheet in the oven to catch the drips.
Bake at 400* for 30 min. then 350* for 50 minutes or till done.

Mustard Yogurt Dressing Recipe

1 teaspoon salt

black pepper, to taste

1 tablespoon Dijon mustard

1 cup plain yogurt

3 tablespoons olive oil

Poppy seeds (optional)

Mix all ingredients until smooth.

Ginger Chicken by Regina Seppi

Set in a large frying pan:
2 T. Red Palm oil or other oil
4 1/2 lbs. chicken, thawed

Set in a Vita-Mix:
2 peeled whole lemons
2” square piece of fresh ginger, peeled
1 whole bulb garlic, peeled
1/4 c. Bragg’s Liquid Aminos
Blend ginger sauce till smooth.

Pour the ginger sauce over chicken. Cover with a lid and cook well. Save the broth to be used on baked potatoes, added to gravies, rice or sautéed vegetables. Serves 9

Vanilla We Enjoy

How to Make Vanilla Extract

INGREDIENTS

  • 3 vanilla beans
  • 1 cup vodka
  • glass jar with tight fitting lid

Our favorite vanilla bean source:

Note that beans are shipped fresh, vacuum packed.
These are seasonal and presently out of stock.


I use vodka for vanilla and tincture making. Once, at Costco I ran into one of Mom’s cousins. We had a nice chat, but I wondered why she didn’t seem as warm as usual.
When I turned to go, I realized there were three large vodka bottles in my cart. :) ~Regina

Almonds + Braggs Aminos = Delicious!


Vivian shared some delicious "Seppi Almonds" with us.

Made via her great recipe: 
Fill a half gallon jar with almonds and 
1/4 c Braggs Aminos.
Soak 3 hours, turning occasionally.
Bake at 250 for 30 min.
These come out a little soft, but crisp as they cool.

Black Bean Burgers


1 tablespoon Extra Virgin Olive Oil
1 small onion (coarsely chopped)
1 medium red pepper (chopped)
4 medium cloves of garlic (minced)
1/2 teaspoon cumin
1/4 teaspoon turmeric
1 1/2 cups cooked or canned organic black beans (drained)
1 cup cooked brown basmati rice
2 cups fresh whole wheat bread crumbs
Hot pepper sauce to taste (optional)
Also optional is adding 1 tablespoon of Ketchup (from Rhonda's Recipe book)
1 1/2 teaspoon Celtic Sea Salt

Almond Milk



3 cups water
1 cup soaked almonds
5-8 dates
a pinch of salt
You may substitute honey and vanilla for the dates.

Almond Potato Salad By Dinah Seppi

Serves 20

Cook 7 or 10 lbs. Potatoes

Let cool at least 3 hours


Add to Vita-Mix:

2c. Almonds

1t. Sea Salt or more

1t. Onion powder


Blend till fine paste. Add:

1 Whole peeled lemon

1 1/3 c. Water


Dice:

1 head Celery

1 firm Onion

Add:

3c. Olives

1/2 c. Prepared Mustard

3c. White long Mung bean Sprouts (Optional)

1 T. Apple Cider Vinegar


Cut the cooled potatoes into bite sized chunks, mix all above.

Top with 1 fresh tomato diced.


This is really good the next day after all the flavors have mixed!

Face Moisturizer Cream or Salve

Recipe: http://bastyrcenter.org/content/view/422/     The mixture used in this study is not commercially available but may be made at home by combining equal parts of raw (unprocessed) honey, beeswax, and cold pressed olive oil. Start with a small amount of each ingredient (e.g., one or two tablespoons). Begin by melting the beeswax in a small pan over low heat, stirring occasionally. Once melted, remove it from the heat and mix in the honey, then the olive oil, stirring the mixture until well blended. While the mixture is still warm, pour it into an airtight container and store in the refrigerator. The mixture should keep for up to three months. A few drops of vitamin E oil (from a gel cap) may be added to each batch for longer shelf life, and to enhance its healing properties.


Kimberly Beauchamp, ND, received her bachelor’s degree from the University of Rhode Island and her Doctorate of Naturopathic Medicine from Bastyr University in Kenmore, WA. Dr. Beauchamp is a co-founder and practicing physician at South County Naturopaths, Inc. in Wakefield, RI. Her emphasis is on women’s health, pediatrics, and detoxification.


A relative buys this face cream at $10 for 1/4 cup.  I made a two cup batch in the blender using less bee's wax than this calls for, to make a softer mixture and added several drops Grapefruit Seed Extract (GSE) as a preservative using oil I had infused with comfrey & calendula (set at the lowest oven heat 2-3 days).   Honey is an excellent moisturizer and it's antibacterial properties are great for combating acne.  It does go on sticky, but an hour later my face feels softer.  ~Regina
