Regina’s Kale Salad


In a salad bowl, add:
8 heads kale, remove stems by tearing off kale
¼ c. extra virgin cold pressed olive oil
1 garlic bulb, minced
juice of one lemon

Use clean hands to massage ingredients for 5 minutes.
By doing this, the kale softens and the flavors blend together.

Add:
½ cup sliced almonds
2 c. sliced olives
2 c. cut tomatoes
Diced avocado

The kale, garlic, tomato flavors blend beautifully.
This Seppi family favorite salad is a meal in itself.

A smaller version:

Kale Salad for Two

In a salad bowl, add:

1 head kale, remove stems by tearing off kale

2 T. extra virgin cold pressed olive oil

1 garlic clove, minced

2 t. lemon juice

Use clean hands to massage ingredients for 5 minutes.

By doing this, the kale softens and the flavors blend together.

Add:

2 T. sliced almonds (opt.)

sliced olives

cut tomatoes

Diced avocado
